I need a good sauce recipe...
Sadly, I do not like my mothers sauce...and shes 100% Italian
I need a good sauce recipe-i like it more garlicy tasting too --HELp!!!!!!!!!!!!!!!!!!!!!!!!!!!

I just kind of throw everything together
sautee garlic and oil and two small pork chops until brown (you can omit the pork if you don't want meat - but I do it for flavor)
throw in can of tomato paste and can of tomoto puree (I use Hunts)
throw in a half a cup of water to loosen it up a bit, a pinch of sugar, salt, pepper and a whole onion for flavor
I let it cook for a few hours while on low to med heat i put it some red wine after it has been cooking for a while, and every time a go back to give it a stir i pour just a dab more wine...
when serving a take the onion out -
---- if you don't have all day i just do everything except brown the meat and maybe leave out the onion- i put it in a sautee pan instead

i don't have exact amounts but i'll tell you what i do. i always make a pretty big pot so this recipe is for a big batch of sauce -- i make it in the big pot
in the bottom of the pot i put about 1 small onion chopped and 4 cloves of garlic chopped. i also add a little bit of minced garlic from the jar because i like the flavor of the 2 combined. i put a little olve oil in (about 2-3 swirls around the bottom of the pot) Let that simmer on low heat until it smells really good! lol -- you don't want the garlic to get dark brown, just til it starts to turn brown a little. then i add 3 cans of crushed tomato and i can of the whole plum tomato that i gently squeeze in my hand before i put it into the pot. i also add 1/2 a can of tomato paste ( i save the rest in case it doesn't get thick enough i can add it later, but the tomato paste needs time to cook or it tastes bitter) Oh--and i use redpack brand all the time.
i let all of that simmer for about 30 minutes, and in the meantime i usually make meatballs--i lightly brown them in a pan but don't cook all the way through and then add them to the sauce along with some sausage. i know a lot of people use pork ribs or something like that but i don't
once the meat is in, i add a good sprinkle of oregano, parsley and italian seasoning. let it simmer on low for about 1 hr. from there i just taste it here and there to check for spices and let it cook a few hours on really low heat. if it is too bitter you can sprinkle about a 1/2 teaspoon of sugar to cut down on it. i also like it really garlicy so if needed i will add some garlic powder towards the end
I hope that makes sense--one of these days i need to write it down as i go so my directions make better sense!!

i saute garlic (like 8-10 cloves) and 2 medium diced onions in olive oil. after a few mins i then add some fresh basil (1/4 cup) and saute that. sometimes i add crushed red pepper. then i add canned diced tomatoes. then i open up a few cans of whole peeled tomatoes and break them up using my hand blender. then i add this to the pot (i would buy pureed tomotoes but they dont sell them here ). add tomato paste, salt, pepper, sugar and a few whole basil leaves and garlic chunks. cook for 4 hours.
