anyone have a good potato salad recipe?

I need to make a bunch of salads for our BBQ on Father's Day. Any easy recipes to share?

So good and so easy...

5 lbs of red potatoes (skin left on) - cut into bite sized pieces & cook
8-10 hard boiled eggs
1/4 cup of white vinager
red onion chopped - to taste
Salt and Pepper - to taste

Mix all together and refridgerate.


Oh Yeah - and Mayo to taste!!!

Fairly easy and always a hit...

Peel, boil and then slice red potatos. (how much you do depends on how many people you are trying to feed)

Put these in a serving dish. Slice up a red onion, add red wine vinegar and olive oil and cut up some fresh mint. Mix this all together and refrigerate until chilled.
