brunch menu/receipie ideas needed

we are hosting a brunch this weekend for a few friends and need to come up with a menu...

anyone have any ideas? something a little different?

I have a great egg casserole dish that is simple to make, filling and delicious.

Egg Casserole

2 packages crescent rolls
red/green peppers
2 containers of egg beaters
Onion
5 eggs
cheddar cheese

Layer bottom of lasagna pan w/crescent rolls. Make scrambled eggs – do not cook all the way – leave a little moist. Pour on top of crescent rolls. Saute peppers and onions and add to pan. Sprinkle cheddar cheese on top. Bake at 350 for 20 minutes.


I also have a crumb cake that's posted on recipes. It's delicious.

Some things I do for brunch:

Shrimp cocktail
Bagels
Lox platter (tomaotes, red onion, capers etc.)
Salads (chicken, tuna, egg)
French Toast
Potatoes
Quiche (sometimes I'll make individual quiche)
Fruit Platter

I like throwing brunch parties and I usually make:
French toast
bacon
scrambled eggs
sausage
potatoes
bagels with cream cheese and lox
veggie platter
Italian meats and cheeses
fresh bread
pasta
fruit salad
cookies/cake

How About French Toast casserole using Challah Bread. The challah bread is great for absorbing the egg/milk mixture. I usually make it as a casserole and cut the challah in chunks and pour the egg/milk mixture ontop and leave it overnight and bake it the next morning.

Ingredients:
2 tablespoons corn syrup
1/2 cup butter
1 cup brown sugar
1 loaf Challah Bread
5 eggs
1 1/2 cup milk
1 teaspoon vanilla extract
1/4 teaspoon salt


Directions:

Combine the corn syrup, butter, and brown sugar in a small saucepan and simmer until the sugar has melted, stirring frequently. Pour this mixture into a greased 9x13 inch casserole dish.

Place the bread slices(or chunks) over the sugar-butter mixture in the dish. In large bowl, beat together the eggs, milk, vanilla, and salt; pour this mixture over the bread. Cover the dish and refrigerate overnight.

The next morning, preheat oven to 350 degrees. Uncover the pan and bake for 45 minutes. Serve while hot.

This recipe for Overnight French Toast serves/makes 6

Also for Variation, you can add Bananas and Cinnamon

Granola Bars

With this recipe you can make Granola Bars or Chunks ( I made the chunks using mini muffin pans) or you can make the granola as a topping for a Yogurt Parfait.

INGREDIENTS:
2 cups of rolled oats (aka oatmeal)
2 tablespoons cholestoral free egg substitute
1 tablespoon honey
1 tablespoon vegatable oil
1 tablespoon artificial sweetner (splenda or equal)
1 teaspoon salt
1 teaspoon vanilla extract

----------------------------------------
----------------------------------------

DIRECTIONS:
1. Preheat oven to 200 degrees
2. Cover a large cookie sheet with parchment or a non-stick silicon baking mat or you can use the mini muffin pans.
3. Mix all ingredients thoroughly in a bowl.
4. Spread mixture into an even layer on the cookie sheet.
5. Bake for 45 minutes
6. Turn over layer of granola and bake for another 45 minutes.
7. Remove from oven an let cool completely.

For variation, add 1/2 cup of dried fruit to the mixture. ( I love using Cranberry raisens and I also add almonds)

Store in an air-tight container.

ETA: Just keep an eye on the granola while baking. Oven temperature can vary.
