Easy Enchiladas

Recipe Ingredients:

10 Mission® Soft Wheat Flour Tortillas
1 Tbsp. Butter
1/2 cup Scallions or Green Onions chopped
1/2 cup Green Bell Peppers chopped
1 1/2 cups Water
16 oz. can Refried Beans
1 3/4 cup plain or jalapeño Monterey Jack Cheese shredded
2 Tomatoes chopped
1 cup Mission® Salsa
1 1/2 cups shredded Chicken cooked
1 pkg. Spanish Style Rice and Sauce
Vegetable Cooking Spray

Recipe Instructions:

1. In a 1 1/2 quart microwave-safe baking dish, microwave butter, green onions and bell peppers, uncovered on high (full power) for 2 minutes. Stir in water and packaged rice; continue to microwave for 10 more minutes
2. Stir in beans, 1 cup of cheese, tomatoes and chicken. Spread approximately 3/4 cup of filling on each tortilla and roll up.
3. Spray a 9 x 13 inch microwave-safe baking dish with cooking spray and arrange enchiladas seamside down. Top with salsa and remaining cheese. Cover with plastic wrap and microwave on high for 8 minutes, turning dish every 2 minutes.
4. Let stand 5 minutes before removing plastic wrap. Rolled enchiladas may be covered with plastic wrap and refrigerated for up to 6 hours. Top with salsa and cheese just before heating.

Vegetarian Tostadas

Recipe Ingredients:

1 bag Tostadas
1 1/2 tbsp Olive oil
1 1/2 tbsp Vinegar
1 cup Shredded lettuce
1 can Salsa Casera (red salsa)
1/4 can Sliced jalapeños
6 tbsp Mashed ripe avocado
1/4 cup Crumbled goat cheese or feta or shredded Monterrey Jack or Cheddar
12 Olives
1 can Refried beans
Salt and pepper

Recipe Instructions:

Place the Tostadas in the dish. Spread refried beans over each tostada. Then spread the mashed avocado over the beans. Top with the salad and garnish with the cheese, salsa, olives and slice jalapeno peppers.

Veggie Quesadillas


Recipe Ingredients:

6 Mission® Soft Wheat Flour Tortillas
4 Tbsp. Italian Dressing
1 large Red Onion diced
1 large Tomato diced
2 Anaheim Chiles seeded and diced
1 tsp. Chile Powder
1/4 cup Cilantro chopped
3 cups Jalapeño Monterey Jack Cheese grated
Salsa, Guacamole and Sour Cream

Recipe Instructions:

1. Combine 1/2 of the Italian dressing, onion, tomato, chilies and chili powder in a microwave proof bowl or casserole.
2. Microwave at full power, uncovered, for 4 minutes or until vegetables are tender and mixture is thickened, stir in cilantro. Sprinkle 1/2 cup cheese on 1/2 of each tortilla and top with 3 tablespoons vegetable mixture.
3. Fold tortillas in half and brush with remaining Italian dressing. Place 3 filled tortillas on a wax paper lined plate and microwave on High for 1 minute or until cheese is melted; repeat with remaining tortillas.
4. Cut each quesadilla into thirds. Garnish with salsa, guacamole and sour cream if desired; serve immediately.

Vegetarian black bean cakes...
Take 2 cans of black beans, squeeze out the juice and mush the beans all together. Add some corn, chilli powder, red and green peppers, and some onions. Add a little bit of corn meal, and then dip in flour and fry them up on the stove. Top with salsa, sour cream and guacamole. YUMMMMMMMMMMM...

there is a great recipe on LIW for kate's empanadas. Just use the Morning Star Farms veggie crumbles instead of the ground beef. Delicious!
