I think - don't quote me, but I think you had more milk.
I just looked at the instant box that I sometimes make and it says to add more milk for creamy masked potatoes

If you have one of those bruan hand mixers they work very well. you can actually even put them in the blender..they come out REALLY creamy that way

Buy a Ricer. It's a kitchen gadget that looks like a humongous garlic press that you put the boiled potatoes in. Squeeze them through into a stainless steel bowl.
Then using your kitchen aid mixer (or a hand mixer) blend in butter and milk. add a bit of half and half or light cream to make them creamer.
Season with salt & pepper

I use my hand mixer but before I had one I mashed them through a collander (strainer)

I always had that problem until I got my KitchenAid mixer. I first use the flat beater and beat it on low then add milk, and butter. I raise the speed for a min. Then I change to the wire wisk, and whip the potatoes on hitgh until they are creamy.

they must be hot..... you can also boil them and not bake them.. when you boil them they will lose a little starch and become less thicker or chunky... but baking them us best.... then beat them with butter, chicken broth, milk, cream or half & half or even sour cream

That's exactly what I do! It makes the creamiest mashed potatoes!

Re: How do you make mashed potatoes creamy and not chunky?
If you are using a hand mixer DO NOT mash them first without turning on the mixer.. just mix them..(am I making sense) also at least a stick of butter

I think this is the best way..... I use a hand masher, then add warm milk and then use a fork to get any lumps out. It comes out creamy everytime.
