Quick and Easy chicken dinner? Last minute...
Lack of preparation here.... I need to stop at the Supermarket and pick up something quick and easy for dinner - any suggestions?
Chicken with some type of veggies would be great but I'm open - pasta, rice, salad, etc! Anyone have a recipe?

I like Lipton's. It's a box that has all the seasonings, and comes with rice or stuffing. Just put the uncooked chicken on top. I made the rice one yesterday. Only takes 30 minutes. Made asapragus as a side veggie.

How Quick?
Quickest is some sort of Stir Fry over white rice with tons of veggies (within 30 minutes - possibly 20 minutes)
Easiest: for me, the easiest is always something I don't have to "cook", just kind of prepare and pop into the oven to bake while I do other things. - Shake & Bake Chicken, BBQ Chicken, etc ...

We're loving BBQ boneless chicken breasts lately. I put on the BBQ sauce and cook for 20 mins at 400 degrees. Delicious! I usually pop in some fries or baked potatoes to go with it.

Either or is fine but you are right, I prefer the pop in the oven, don't care how long it takes to actually cook as long as I don't have to put alot of time into prepping it.

Is that in the soup aisle? Or is it with the Hamburger Helper type stuff?

I love to make stir fried veggies (peppers, onions etc) you can get a package of frozen stuff, fry that up with chicken breast and some teriyaki sauce. Then on the side, make some Goya rice and mix it all together in a bowl when done - so good!!

Whenever I don't feel like cooking, I make one pan meals.
In a non stick baking pan sprayed with olive Oil (misto comes in handy) I lay
Potatoes, roughly 1/4" thick Onions, roughly quarters to 1/4" thick Garlic, 4 cloves whole, paper off Veggies: Celery, baby Carrots, green beans, broccoli, peas, almost any veggie you have at home works
Then on a baking rack over the veggies I lay the chicken out.
Season chicken how you like (lemon & Rosemary, Adobo & Sazon, Emeril's Essence, Montreal Chicken, whatever). Lightly sprinkle veggies with same seasoning.
Roast at 400 degrees until chicken is 180 degrees.
If the veggies look too dry, I add chicken broth in small amounts every 10 minutes or so.
The dish then has meat, vegetables and starch. Done.

i like stuffed chicken breasts.... 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken 1 cup water 2 eggs, lightly beaten 6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness 1 can (10-3/4 oz.) condensed cream of chicken soup 1/2 cup milk 1 tsp. paprika
PREHEAT oven to 400°F. Combine stuffing mix and water in medium bowl. Let stand 5 min. Stir in eggs. PLACE chicken, top-sides down, on large cutting board; spread evenly with stuffing mixture. Starting at one of the short ends, tightly roll up each chicken breast. Place, seam-sides down, in 13x9-inch baking dish. Mix soup and milk; pour over chicken. Sprinkle with paprika. BAKE 30 min. or until chicken is cooked through (170°F).
OR
marinate chicken breasts in italian dressing, Lawry's marinade, or plain old teryiaki sauce. Cook with rice, fries, any veggie.
OR
pick up a box of rice a roni....they have one dish meals on the box!

I like the Cambells bakes...you just mix and add the chicken. I like the garlic pasta one. It's usually with the noodles or mac and cheese isle

I say get a rotisserie chicken, bag of salad and some veggies. You can have dinner ready in 15 min, just warm up chicken in the oven while prepping the sides.

I'm probably a little late but....
Cut up chicken into little cubes and throw them in a pan with olive oil in it. Then put in roasted peppers, drained spinach, basil, oregano and some lemon. Put it over pasta.
This is what I'm having tonight.
