(low fat) Broiled Salmon, Baked Sweet Potato Fries, Zucchini Boats
BROILED SALMON Salmon Glaze (eyed and made to taste, so measurements are estiments) Brown sugar (about 1/4 cup) ground ginger (about teaspooon) Terriaki Sauce (about 1 cup) Dijon Mustard (about 1/2 cup) Mix together and brush on salmon Broil for approx. 10 minutes or until done
SWEET POTATO FRIED Cut 2 large s. potatos 1/2" strips 2 Tbps chili powder 1/4 cup parm cheese Shake potatos in seasons and spread in one layer (cooking spray coated) cookie sheet.
ZUCCHINI BOATS Warm EVOO in pan, saute garlic (don't burn or will be bitter) slice long ways, zucchini in 1/2. Place cut side down into garlic. Cook for about 8min or until zucchini gets carmelized, flip and cook for 1 min. Sprinkle with parm cheese salt and pepper and Place in oven and broil for 2 minutes.
Made it last night - NO LEFT OVERS!!!!

sounds great...what temp for the sweet potatoes or did you broil them too??

sounds great...what temp for the sweet potatoes or did you broil them too??
350 bake about 15 minutes and flip then bake another 10 of until done.
