Cheesy Asparagus Rice
Made this last night, was really good!
Rice-Any kind....If using converted rice, then add one can of Chicken or vegtable broth to it, versus the water
I used Uncles bens microwave rice. I took it out after half the time, put it in a pot with 1/4 cup of chicken broth
-Thawed frozen asparagus( about 1 cup) chopped into 2 inches pieces
-1 red bell pepper diced
- 1 cup of Jarslberg Cheese( can use Swiss as well)
Once rice is cooked, add the asparagus, the chopped pepper and cheese and continue to cook stirring frequently for 3-6 minutes untill cheese melted and veggies heated through. Add salt and pepper to taste.
It really was very very good!
