Heart Healthy - Recipes

My dad is coming to stay with Danielle and I for a few days and he cannot have high fat or high sodium foods. I was wondering if anyone had any low sodium, low fat recipes that tasted good.

I have a GREAT low sodium recipe.

I do not have exact measurements....because it depends on how much you want to make.

boneless, skinless chicken breasts
low salt diced tomatos
green peppers
onions
Mrs Dash
garlic powder (if you want)

Trim chicken breasts of any excess fat
put chicken in a baking pan
cut up peppers and onions (either in rings or slices) and put over chicken.
pour tomatos over chicken, peppers and onions. The more tomatos you use the more sauce you make.

Sprinkle Mrs Dash and garlic powder over top. Cover with foil and bake at 350 for about 35-45 minutes. Check chicken for doneness.

Serve over rice, noodles or pasta

Enjoy!!!

Tip: I usually use 2 (14.5 oz) cans for each 4 chicken breasts.

This one is tasty ....

LEMON-BARBECUED CHICKEN
Serves 4
2 1/2 pound frying chicken, quartered, skinned, all visible fat removed (I would just use pieces, specifically light meat ...)

Dash paprika

Dash cayenne pepper

1/4 cup fresh lemon juice

1/4 cup honey

1 tablespoon sesame seeds, toasted

Preheat broiler. Rinse chicken and pat dry.

Season chicken lightly with paprika and pepper. Combine lemon juice and honey in a small saucepan, mixing thoroughly. Heat over medium heat until warm and set aside 2 tablespoons.

Coat chicken pieces with about half of the rest of the lemon-honey mixture.

Place chicken on broiler rack. Broil 4 to 5 inches from the heat 15 for minutes. Baste occasionally with remaining lemon-honey mixture.

Turn pieces over, baste and broil 15 minutes longer or until tender. Combine sesame seeds and the reserved 2 tablespoons lemon-honey mixture. Spoon over chicken just before serving.

This also may be cooked on a charcoal grill.

Maple Glazed Pork Chop

4 (5-ounce) boneless center-cut pork loin chops
dash Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1/4 cup pure maple syrup
1/4 cup chicken broth, low-sodium canned

Heat a large skillet over medium-high heat. Dry the pork chops well and season with salt and pepper, to taste. Add the oil to the pan and heat until shimmering. Lay the chops in the pan and cook until lightly browned on the first side, about 4 minutes. Turn the chops and cook until the second side is browned and the chops are cooked through, about 3 minutes more. Transfer the chops to a platter.

Pour off the excess oil from the pan. Add the vinegar, and return the pan to the heat and use a wooden spoon to scrape up any brown bits that cling to the pan. Stir in the mustard, maple syrup, and chicken broth, along with any juices from the pork chops. Cook over high heat until the mixture is syrupy, about 5 minutes. Season to taste.
