Broccoli Pie (my favorite!) ------------- 2 eggs 8 oz of thinly shredded diet cheddar cheese 8 ounces of part-skim cottage cheese 1.5 packages of frozen CHOPPED broccoli, defrosted and drained well pepper
defrost broccoli and sqeeze all the water out of it. combine broccoli in bowl with eggs, cheddar cheese (save some of the cheese on the side), cottage cheese and some pepper. put into a Pam-sprayed pie pan sprinkle some cheddar cheese on top and bake 20 minutes at 400 degrees. Let sit for 10 minutes before serving
Orzo with Parsley and Lemon Zest: ------------------------------------------------ 1/2 pound orzo Coarse salt 1 tablespoon extra-virgin olive oil, eyeball it 2 large lemons, zested Black pepper 1/4 cup finely chopped flat leaf parsley, a couple of handfuls
Cook orzo in salted water about 12 minutes, to al dente. Drain orzo well. Do not run under cold water. You want the cooked pasta to remain hot. Transfer pasta to a serving bowl. Drizzle orzo with a tablespoon of extra virgin olive oil and season with salt and pepper. Add lemon zest and parsley and toss to combine the flavors with the pasta.
Spicy Sesame Broccli -------------------- 1 bunch broccoli 1.5 tbsp sesame oil 1 small (I prefer several large!) garlic clove, minced 1/8 tsp crushed red pepper 2 tsp soy sauce 1 tsp lemon juice Bring large pan of salted water to a boil. Cut broccoli into florets. Add broccoli to water and cook for 1 minute. Drain. In a large skillet, warm sesame oil, garlic and red pepper over low heat for three minutes. Stir in soy and lemon juice. Add broccoli, toss and coat.

Lemon Potatoes
2-3 lbs peeled potatoes cut into wedges (you can use red bliss also, which you won't have to peel) Fresh lemon juice (1 or 2 depending on taste) EVOO - 2-3 TBSP Garlic Powder - 1-2 TBSP Salt & Freshly ground pepper Fresh parsley chopped - 2 tbsp
Boil potatoes in lightly salted water until you can pierce with a fork and it slides off. Be careful not to overcook. Drain.
Add the olive oil, lemon juice, garlic powder, and parsley and toss. Salt & pepper to taste.
