Re: Hard Boiled Eggs

I put the whole egg in a pot and boil for about 20 minutes (depending on how many you have in the pot).

Re: Hard Boiled Eggs

I have been doing this.
Put eggs in cold water in pot and bring to a boil. Then, I put a tight fitting cover on and turn off the heat and let them sit in it for about 18 minutes (I think this is what my Betty Crocker book told me to do.) They come out totally hard boiled, but I they don't get that green-gray color on the yolk like I used to when I'd boil them continuosly for 20 mins.

Re: Hard Boiled Eggs

After they boil, I only leave them in for 5 minutes more if I am eating them right away. If I am putting them in the fridge for later, I turn the heat down low and leave them on for about 15 minutes, then cool them in cold water, then put them in the fridge.

Re: Hard Boiled Eggs

Here are the tips I learned on how to make good eggs:

* Start with room temp eggs so that they peel easier.
* Put cold water into Pan about 1" above eggs
* heavily salt the water (~1/2 cup), it doesn't flavor the eggs, makes them easier to peel
* Coddle the eggs, don't rapid boil them (slow boil them). After the water boils initially, lower the heat and simmer for about 15 minutes. that prevents them from cracking.
* Immeditely rinse in cold water until they are cool.

2 things you can try:

1. Put them in before the water gets hot (i.e. before you turn on the stove)

2. If you are going to boil the water first, then run the egg under warm, then hot water before lowering it gently into the boiling water.
