Need creative ways to add more veggies to my diet
I ate a apple and a banana everyday, an whole grain eng muffin with hummas or honey and a turkey sandwich on whole grain bread and usually a good dinner.
But I need to add more veggies to my diet, but I am not to crazy about them.
Any ideas????

How about vegetable soups? I also try to add extra tomato or sliced cucumber to sandwiches and wraps - it bulks them up a bit and helps me get the extra veggies in too.

A salad? I always eat salad with dinner...Gregg eats about 3 bananas a day! One before bed, one in the morning, and one in the afternoon. I've been putting peanut butter on apples, which is yummy!
Or let's go out to lunch and get pizza and count the sauce as a veggie!

Beth, I bring salad to work alot, but I end up not eating it and I let it go bad in the frig. I have a problem with salad at work.
We'll go for pizza on Monday!!! I'll get veggie pizza!!!

Progresso makes a really good veggie soup called Garden Vegetable. It's pretty much the WW soup recipe. Yummy!

In the winter is when I'm better at adding lots of veggies into my foods. Stews, soups - almost anything I throw into the slow cooker gets lots and lots of veggies. I even make a spinach & zuchinni lasagne to cut up and freeze for me to bring to work since DH wouldn't eat it

veggie stir fry works for me...you can mix in a lot of veggies and use different flavors like teriyaki etc...it is a great side dish.

I go to the grocery store and buy the soup veggies (potato, onion, carrot, leek, parsley, parsnip and turnip), chop, sautee with garlic in a big stock pot. Add enough water to go to the top (leave an inch), bring to a boil, add a tablespoon of broth (there's a really great broth in a jar, I forget the name) and then at the end, I add pastina. I cook it for about 3 hours (leave the pastina out until the end). Add seasoning to taste. Great source of veggies and very light, too!

I was gonna say veggie pizza!
if you roast a chicken, throw some veggies in to roast with it.
it's also amazing how small a serving of veggies truly is....not that much! a whole carrot might be 2 servings! What about raw veggies with dip???
It's hard for me too, I buy them and they go bad.
So I've turned to applesauce, a banana with my cereal in the AM, Trader Joe's Fruit Leather, Fruit Juice counts too and so does V8
