Low Fat Chicken Cutlet Marinade
I know this should be in the recipe section, but more people post here....So if anyone has any ideas for a Low Fat Chicken Cutlet Marinade, I would appreciate it.
Or if you have any ideas on how to make chicken cutlets.....Other thanbaking them or frying them, that would be great too
I have onions, garlic, sliced mushrooms, and red peppers.....
Any type of stir fry idea would be good too....
Thanks, Scott

Re: Low Fat Chicken Cutlet Marinade
I like to use a low-fat Italian dressing to marinate. Also, with the ingredients you have, why don't you make fajitas? Just put the chicken in a ziplock baggie with some chili powder, garlic, cumin, and lime juice if you have any. Marinate it for about an hour, then grill the chicken and cut into strips. They have low-fat and low-carb tortillas that you can use...

STIR FRY
I would pound the cutlets thin & then slice into strips. Marinate in garlic, soy, teriyaki, garlic, ginger (if you have it) and a little sesame oil (if you have it).
I would cook along side the veggies on top of stove.

No, that would be good! Mix in some cooked brown rice with it too

Honey-Mustard Marinade...
This is sooooooooooooooooooo good.
Mix half a cup of dijon mustard (I buy the cheapest I can find), with 1/4 cup of coarsely ground mustard and 1/4 cup of honey.
That's it! It's also great to make some extra and put over some steamed veggies or brown rice. MMMMMM

Re: Low Fat Chicken Cutlet Marinade
Well, not marinade for stir fry, but i made the best chicken for tacos, fajitas, etc. the other day, i couldn't believe how easy and delish. All you do is put some boneless/skinless cutlets in a pot, dump in a can of enchilada sauce and some taco seasoning, cooked it for a while on pretty low heat and by the end it was so tender, it just shredded w/ a fork. It was so good!

Sounds good but it would probably be too spicy for me.....I cannot eat Spicy Scott

Re: Low Fat Chicken Cutlet Marinade
Someone told me about this on here last week....I used Mc Cormicks Teriaki package seasoning last night. It is a powder and I mixed it w/ water (instead of oil) and white vinegar. It was the best grilled chicken I ever made. I also have Meskite and Cajun in the cabinet.

Re: Low Fat Chicken Cutlet Marinade
We use Balsamic Vinegar all the time, and its fat-free - very good too! If you do chicken skewers (with peppers, onions and cherry tomatoes) on the BBQ you don't even have to marinate, just put salt, pepper and onion powder and it comes out great.

Re: Low Fat Chicken Cutlet Marinade
I put balsamic on everything.
I also have a fantastic recipe from the Pump Energy Food for their chicken. The marinate their chicken with just lemon and oregano. It's delicious.
