Maybeamommy!!---bump for update
Can you tell me how you made the meat stuff for inside of the empanadas...
I got ground beef, an onion, the goya discos....I have cumin, coriander, salt, pepper....
Not 100% sure yet what I'm doing and I don't want to eff it up for my guests LOL

hey, not sure if she will be on so maybe I can give you mine?
I sautee chopped onion and minced garlic and then add the ground beef and crank up the heat. once the meat is browned a add my spices. I like cumin, coriander, and a bit of chili powder, salt and pepper. adjust the seasonings to your taste, I then add a little bit of plain tomato sauce.
some people put raisins, but you would also do spanish olives chopped or corn or diced cooked potatoes. I also add shredded cheese or beans to mine as well.
not sure if you itended to bake or fry, but I bake them at 350 after basting the top in egg wash.
if you can wait for Hayley's recipe awesome but if not, these generally come out pretty good.

Oh yay! I'm so excited. I hope they come out good!
Heat a little bit of oil (vegetable or canola) over medium. Chop the onion up pretty small and add it when the oil heats up. Saute until it starts to soften and turn translucent (3-5 minutes) then add some diced jalapeno (you can remove the ribs and seeds to reduce the heat of the pepper) then add a clove or 2 of minced garlic. Saute until fragrant (once you can smell the garlic it's done... should only be about a minute). Add your spices - I like to use salt, pepper, coriander & cumin. I sometimes add chili powder for a little color (it's not spicy). Add the meat and brown it, breaking it up with a wooden spoon as it cooks. Remove from heat once meat is cooked through, then let cool for a few minutes and add some shredded cheese.
Preheat oven to 375 and line baking sheet(s) with parchment paper. Fill the discos with the meat mixture - you want to put it all in the center then brush the edges with egg wash and fold over. Crimp the sides with a fork to seal and make it look pretty :) Brush the tops with the egg wash and bake about 18-20 minutes until they are golden brown.

UPDATE!
Made them, and they are YUMMY! Thank you SOOO much for your help...it was actually pretty easy, just filling each shell took some time, but overall pretty easy. I think next time I need to spice up my beef mixture, but then again, I like it spicy I hope everyone likes them tomorrow. So I have burrito pie, empanadas, quesadillas, chips, salsa, guacamole and queso.

Everybody loved them!!!!! Thank you so much!!!!!! They were like, oh I didn't even know you could buy the little rounds for shells, I was like yeah there's a really good cook on this online website I go to 
They liked how they weren't fried either but still really yummy...thanks for the recipe I was on the line about going out and buying frozen ones but these were a lot better 
We ate and ate and played poker till after 1am!

umm!!!! thanks to this board i learned a wonderful shortcut of buying these fabulous discos!!! awesome!! made empanadas last night with dh! i am totally stocking up and keeping them in my freezer... thanks!

I made these last night and basically combined the two recipes above and my cousin's wife's recipe- and they were DELISH!

1) they are frozen with other hispanic products 2) asamble them but BEFORE putting them in the oven you can refrigerate the empanadas. We my family make them for parties we do them the day before and in trays over wax or parchmant paper we put them in the refrigerator.
