"97% fat free" - what exactly does this mean?

"97% fat free" - what exactly does this mean?
so in eating ice cream last night, i noticed that it is 97% fat free. what exactly does that mean?
it had 3g fat per serving. it CAN'T be that they removed 97% of the regular fat - that would mean that it normally has 100g fat which is definitely not the case.
soo as a numbers cruncher, i tried to figure out what this clever "97% fat free" statement meant.. and i'm at a loss!

Total fat is given per 100g of the product. So 3g of fat per 100g makes it 97% fat free
