a few questions...re freezing baked goods and the odious white chocolate haha
so, I am wondering, have you ever prebaked a cake or cupcakes and frozen them with taste and textural success once defrosted and served?
dh is take luce out for a few hours this weekend (go REDBULL) and I want to really maximize this time...but if it will taste like ish I won't do it.
also, white "chocolate". I hate it BUT I realize other people like it. so I was thinking....can you make a ganache of sorts out of white choclate?
it would be easier for me to color and ice with a ganache (much smoother finish) so I am hoping this is possible.
and please recommend any white choco brand OTHER than those wafers from craft stores. I can't stand the taste of them. how is ghiradelli?

My mom and I have always had luck doing this; cakemix cake and cupcakes, BTW. :)

I have tried a few times to make a white chocolate ganache and have had no success at all. For some reason it comes out to thin. This was with Ghiradelli chocolate also.

hmmm..I am going to make some "test" batches of the white ganache this weekend. did you ever figure out the runny????

No...I took a recipe that was for regular ganache, added less cream and then swapped the chocolate it just was soupy once melted. Then I tried to save it and added those white chocolate chips from the craft store and that made them a mess.
I also had a hard time finding a white chocolate ganache recipe so if you happen to find one, could you post it

I have doen this with homemade cakes and cookies in the past. I just put them in the freezer and decorated them when i needed to. The lady that I use for cakes, does this all of the time.
For future info, if by chance you ever recieved a homemade gift of cookies from my home, chances are the were frozen prior to them reaching you!
taste is not compromised.
