Adventures in Lowfat cooking...
I got the Trader Joe's Low Fat Fajitas and made it tonight. It was great and easy to make. They give you all the ingredients in one bag for around $3.60. And it was only 1 point for 1 and 3/4 cups. I put that on a 2 point missioni tortilla wrap and it was a great meal. Not that it really goes together but I had been wanting to try cous cous so I made the far east cous cous tonight to go with the fajitas. It was okay. I think it is an acquired taste. But it was pretty filling and DH liked it so that was a plus.

Mmmmmmmmmm, sounds good! I have to try Trader Joe's I've never been in the store. We just started eating cous cous too. I like the flavors, like parmesean and lemon spinach. We just bought tomato lentil this week, I hope that one is good.

We LOVE couscous.
I actually buy the big jar of the plain couscous and flavor it up myself. Kim, you might like that better, so you can make it exactly how you would like it.
These are some combos I use:
chicken broth, olive oil, carrots and onions
Broccoli and some light chedder cheese
parmesan and olive oil

DEFINITELY use chicken broth when making cous cous - makes so much of a diffference.
If you grow to like cous cous, you might want to try quinoa - it's like cous cous but is a healthier grain - it's one of those power foods that is packed with nutrition. If you cook it with chicken stock and add veggies and some olive oil, it's pretty good.
