Almond Paste
Does anyone have recipes that call for almond paste beside pinoli cookies? DH bought a huge can of it for me at Restaurant Depot and I don't know what else to make. I saw on another post Rainbow Cookies anything else please post recipe!! TIA

I have a recipe for Almond Macaroon Fingers. I have never made them but I may try them out this year
Ingredients 1 can(s) (7- to 8-ounce) almond paste 1/2 cup(s) confectioners' sugar 2 large egg whites 1/2 teaspoon(s) vanilla extract 2 ounce(s) bittersweet or semisweet chocolate, broken into pieces
Directions
Preheat oven to 300 degrees F. Line 2 cookie sheets with parchment.
In food processor with knife blade attached, process almond paste and sugar until combined (a few small lumps will remain). Add whites and vanilla; pulse until well combined.
Spoon batter into decorating bag fitted with 1/2-inch star tip. Pipe batter into 3-inch-long fingers, 1 inch apart, onto prepared cookie sheets.
Bake macaroons, on 2 oven racks, 17 to 19 minutes, rotating sheets between racks halfway through baking, until cookies start to turn golden brown on edges. Cool on cookie sheets on wire racks. Repeat.
In microwave-safe cup, heat chocolate in microwave oven on High 1 minute or until soft and shiny. Remove; stir until smooth. With pastry brush, brush chocolate on half of each macaroon; let dry. If necessary, place in refrigerator 5 minutes to set chocolate. Peel cookies from parchment

Yup it is stocked in the bakery aisle and at my Stop N Shop they also have a section by the front door with baking goods and the almond paste is there as well

Really simple and delicious linzer tart recipe:
1 pkg (16 oz) refrigerator sugar cookie dough (pillsbury)
1 tube (7 oz) almond paste, such as Odense*
2/3 cup all-purpose flour
1/2 cup seedless red raspberry preserves (Polaner** all fruit)
1/4 cup confectioner's sugar
Heat oven to 350 degrees. On floured board, knead together cookie dough, flour and almond paste. Wrap in plastic, refrigerate for 30 minutes. On lightly floured surface, roll out dough to 1/4" thickness. Using 2 3/4"fluted cookie cutter (I used much smaller) cut rounds from dough, rerolling scraps as necessary. Using 1 1/2" star cutter, cut stars from 1/2 of the rounds. Place 1" apart on cookie sheet (I lined with parchment paper). Bake star cut outs as well. Bake 8-10 minutes (check after 8), until very slightly browned. Let sit one minute, then transfer to cooling rack. Cool. Divide raspberry preserves among the whole rounds. Place star cut round on top. Sprinkle with powdered sugar. Sprinkle stars with confectioner's sugar also.
