am i missing something with Erythritol sugar substitute??
i've read many a recipe listing erythritol as a keto sugar substitute.
although i don't do keto, i have been trying to slowly kill my sweet tooth by going to sugar substitutes and then weaning off.
i purchased some erythritol and that stuff sucks ass. i've only used it a couple of times in my morning coffee. does it change/get better if it's cooked/baked?
yuck!

DH uses it a lot. I don't really taste it in his baked goods to be honest.
But try Stevia or Monkfruit instead.
I happen to like the taste of Truvia which is a Stevia/Erythritol mix
Actually for your coffee- definitely get the truvia- it tastes fine to me and it's keto friendly/doesn't spike insulin

i plan to make some protein muffins sometime this week. i'll give it a shot in that recipe to see.
i usually use equal or splenda in my coffee... but i was curious to try something new. it was a major fail lol
thank goodness i didn't buy the monster sized bag.

Equal and Splenda aren't great because even they they are "sugar free" they do affect your insulin levels. Believe it or not. Plus they are pretty chemical. Definitely give the Truvia packets a try if you are looking for a change. They are also better on my gut. Splenda will screw with your gut bacteria believe it or not.
And yes, try the Erythritol in baking- I find I don't taste it in his baked goods.

Watch this when you have time. It's very informative. It talks about how Splenda kills your gut bacteria. And judging by how my stomach was when I was using it- it makes sense! It also discuss the other artificial sweeteners and compares them

I LOVE erythritol for baked goods - and I can usually taste fake sweetener from a mile away. I cannot taste it at all in baked goods. Definitely give it a whirl. I’ve never used it in coffee - I don’t really think it’s meant to sweeten drinks, to be honest.

So I thought of this thread last night-
DH had made a low carb "banana" bread with erythritol and I had a piece last night and didn't taste any artificial sweetener or anything off at all.
So I am thinking baking it is the key....

ha! i was talking about this thread, this morning! i was telling SO about what was discussed. we'll be making some protein muffins tonight. i was hoping to make them last night, but the evening got away from me.
