Another contractor question - opinion please

Our adjustor said we need to have all floors on the ground level ripped up and all walls ripped out and reinsulated four feet up. As a result, it means the counters and cabinets need to be redone and all interior doors (closets, bedroom doors) need to be replaced.

I have now spoken to three contractors and they are all telling me different things. I don't know who is right!

Person 1 - shady guy who I got rid of but said it all needs to be done

Person 2 - my neighbor's cousin who owns a construction company. He said re insulating four feet is not necessary. He said two feet is plenty. All other work as listed above is needed.

Person 3 - a recco from you lovely ladies! He says my walls are fine and the kitchen doesn't need to be touched. The floors elsewhere on the first floor need to be done.
he says that I have a very generous adjustor who probably just wanted a bigger payoff.

I want to do this right - fix what need to be fixed to bring it back to it's original condition but nothing more. I don't know what to do or who to listen to. Thoughts please?

I asked my DH.
how many inches of water did you have originally? He said that if you had 6 inches or less, 24in (2ft) up of insulation should be changed. anything more, than the full 4th should be changed.
Also he said that when they do rip the walls apart, make sure fans and dehumidifiers running for at least 5 days to draw all the moisture out

Oh and he said #2 sounded right

We had five inches, maybe a tad under.

Thanks for asking your dh. Why do you think person number 3 would tell me I don't need to do the walls or my kitchen/bathroom floors (both tile, rest of downstairs is wood)? I'm so confused as to why a recommendation would be made to do less work? That is not to the contractors advantage obviously!
