Re: Any appetizing recipes for fresh collard greens
I make sweetheart cabbage (which is very similar) in a really simple way. I wash it in a colander and keep it quite wet. In a pan (deep one) I heat up olive oil and garlic, then I put the wet greens in, give it a stir, add a little salt and put the top on. Let them steam for 5 minutes in that water, and try to see if you like them.
Thats it! Sometimes I like them a little firmer than other times, so thats what I mean about trying them.

Re: Any appetizing recipes for fresh collard greens
I've tried really hard to make collard greens taste good and I can never get it right - maybe they are just too bitter for me.
When I did make them, I blanched them in boiling water to make them a little more tender. Separate pan saute bacon and onions. Add collards to the pan with garlic, salt, and pepper and cook over low heat.
Collards are tough, I think you need to slow cook them to break them down - they break down MUCH slower than a spinach or something.

I do the same except I add either apple cider vinegar or red wine I eyeball it but probably 2-3 tbs. I also let it steam longer more like 15-20 mins.
