Any ideas what to do with a ton of lettuce?

I bought a BIG package of spring mix greens for a salad for a party but it was cancelled. What, besides salad Chat Icon , can I do with it so it doesn't go to waste? I'm eating salad, but still, there's a lot left Chat Icon

First I would move it to a tupperware container and put in a couple of slices of bread..it'll keep it fresher longer. Supposedly those packages are "special" and keep the lettuce fresher longer but I dont agree...

Honestly I would maybe toss it with some HOT pasta and vinagrette..Im sure it would make a nice pasta dish (although this is something Ive only done with baby spinach and tomatoes)

Yum, that's a great idea for the pasta. I'll have to do that tomorrow night. And I never knew that about the bread, I will have to try that!! I agree, it never stays fresh in the container!

BLT sandwiches
Shred some for Taco night
Griiled balsamic chix over greens
Lettuce wraps (stuff with chicken, chic peas, rice, chopped veggies, hummus, etc)

I saw this recipe for Creamy Arugula and Lettuce Soup with Goat Cheese on the Food Network the other day and it's designed for people who need to do something with leftover lettuce:

It got good reviews, but I haven't tried it myself. Enjoy!
