DH loves the Skinnytaste bagels I make, only 3 points each. I tweeked the recipe and added 2 egg yolks to the dough, adding 4 minutes of baking time. The eggs gave the bagels a little more substance, and didn't add to the point value.
Skinnytaste recipes list the SP values, that's a big help.

I started 2 weeks ago, I've been doing a lot of chicken breast and fish.
Chicken topped with salsa and fat-free Greek yogurt
Chicken with 1/3 cup low fat Mexican cheese, black beans, corn and red onions
Chicken topped with bruschetta and 1 low fat string cheese cut up in chunks
Shrimp stir fry with veggies, chopped garlic, ginger and low sodium soy sauce
I made scallops last night for the first time and they were so simple and tasty! Had them over some steamed spinach that I mixed with Laughing Cow Cheese to make a 'creamed spinach' and it was a good dinner.
Egg white omelet with lots of vegetables
Tumaro's Skip The Sandwich wraps are what I usually take for lunch filled with chicken, tuna or turkey breast.
I like to make chicken salad with celery and Laughing Cow Cheese instead of mayo
I usually grab a banana for an afternoon snack.
My latest obsession is Swiss Miss Sensible Sweets Light Hot Chocolate made with water and 2 tablespoons of International Delights Coconut Creamer. It's 3 points and really satisfies my sweet tooth.
