I'm growing basil and oregano but not sure when to pick the leaves or what to do with them besides using fresh basil in sauce

I dont know much about herbs but could you dry them out and somehow put them in a dressing or marinade?

We have a rosemary plant and we use it when a recipe calls for fresh rosemary.

Re: anyone grow their own herbs?
We have fresh basil & last year fresh parsley. My roommate from college has a whole garden of herbs if you have any questions I can FM her.
eta. We use the basil in sandwiches, appetizers (fresh basil, fresh mozzarella, tomatoes & balsamic vinegar), in sauce, make pesto, etc.

I'd appreciate that Barbara. My main concern is WHEN to pick the leaves if I don't use them often as fresh basil (some of the leaves are losing their green color and getting wilty, but still smell like basil).
I'd also love to know how to preserve them so that I can use them after the warm weather...maybe dry them and use that till next year when I plant again.
I want to make fresh pesto too....got a recipe? does it keep well, like can I make alot and freeze it?

Re: anyone grow their own herbs?
hi you should pick the leaves when they are mid sided if you let them get too large alot of herbs get bitter. as for preserving them with basil you can either hang them so they can dry or chop them up and freeze them. i do both depending on how large the crop is.
for the ones getting a bit wilty looking are they very leggy? if so i would recommend cutting them now and hanging them to dry.
if you need specific questions answered fm me i am always glad to help
