Anyone have a really good coconut cake recipe? Or any cake where coconut is a key flavor?
DH's birthday is this week and I'd like to bake him a cake.
He's a big fan of coconut so I'd like to make a cake where coconut is one of the key flavors. I keep finding recipes where the coconut is mostly just the frosting vs the coconut being incorporated into the cake.
Anyone have a good recipes?
In my head I keep picturing a raspberry-coconut cake but I've never seen a recipe for one (not even sure where i got this idea, lol).

This is really yummy (from my blog):
Coconut Cake
The recipe is written to make a single 9-inch layer (it's part of a larger recipe where one layer is coconut and one is chocolate). If you want to make two layers, double the recipe...or you can make another single layer if you find a raspberry cake recipe.
The batter is super thick but bakes nicely!

I have made Ina Garten's coconut cake quite a few times and I think its great, read the reviews before baking it. I found that helps. I used coconut milk instead of regular milk.

I do and only post once or twice a month. I need to get back on the wagon. It's been way too long since I wrote anything, and I've been working on a bunch of stuff (not all food related though)!

Just a thought, never tried, if you make the coconut cupcakes, maybe you could fill them with raspberry jam and frost with a coconut frosting?

Yum, this all sounds good. I found a recipe for a lime-coconut cheesecake with a mango sauce I'm thinking about. DH loves cheesecake but now I'm torn about which cake to make - leaning towards Ina's though.
