i use this one!
1 cup confectioners' sugar 1 pint part-skim ricotta cheese 1/3 cup mini semi-sweet chocolate chips 1 tablespoon amaretto liqueur {I use almond extract} optional - slivered almonds
In a large bowl, stir ricotta cheese with 1 cup confectioners sugar until combined. Add {almonds}, chocolate chips and almond liqueur/extract.

I used this recipes to make cannoli's and since I didn't have the shells I used Sugar cones, dipped them in melted chocolate chips, let them cool and used this recipe for the cannoli filling...came great!!

DID you drain your ricotta cheese? I made cannoli filling the other day, did not drain the cheese, and the filling was runny. I expected the consistency to be stiffer and I was unable to fill the shells with it. I am going to use your recipe next but I think I am going to drain the cheese, as well.
I was so disappointed with the whole outcome. DH thought it still tasted good and is using it as a graham cracker dip, so not a totally loss.

It would probably work best with either yellow or chocolate cake!! Yum..chocolate cake with cannoli filling and whipped cream icing!

I am trying it this weekend with a chocolate cake and a buttercream and chocolate ganache glaze.
We shall see how it comes out.
Glad you posted that you drained it, I was going to ask that. Do you have to use a cheese cloth, or can I use a super fine strainer?
