I feel stupid saying I'm not sure what white chili is. I have a really easy Green Chili recipe From BFL that I have been using for years and it looks white when it's cooked so maybe it's kind of what you are looking for?
Take 8 cups of chicken stock or broth and put it in a big dutch oven or pot with a large chopped onion, and about 1.5 lbs of chicken breast cutlets. Bring to a boil and then reduce and simmer until cutlets are totally cooked through. Remove chicken and set aside.
Whisk 2 envelopes of Knorr Roasted Chicken Gravy Mix into the chicken broth. Toss in 7 minced garlic cloves, a little less than a teaspoon of cumin, a chopped jalapeno (remove seeds if you want it more mild - keep them for more heat), 2 small cans of chopped mild green chilies and a good bunch of chopped cilantro.
The recipe here calls for Hominy.. but I usually toss in some navy beans. Let it simmer on low.
By now chicken should be cool enough to handle, shred it with 2 forks and toss it back into the pot and continue to simmer for about 20-30 minutes.
When it's done I will normally stir in a few chopped tomatoes for additional color and top with sour cream. Serve with warm tortillas or rice.

I made a quick one the other night using chicken, white beans, and a season packed from mccormick for "white chili". It was really good, but I would love to try to make it from scratch rather than using the season packets.

I have an amazing one!!! It is from my MIL. It is delicious. Here are the ingredients. I just have to confirm with her the actually cooking steps.
1/4 Ts cinnamon
1 1/2 TB oregano
1 1/2 TB cumin
1/2 Ts pepper
1 1/2 Ts garlic
3 chicken broth (boullion cubes)
1 low sodium chicken broth
4 cups water
1 large sweet onion chopped
3 boneless chicken breasts
3/4 c white wine
7 oz. chopped green chilies, mild
3 cans Great Northern Beans
1/2 cup lime juice
thicken with corn starch
I will confirm the cooking. But I am pretty sure you add all ingredients in a big pot minus the beans. Cook the chicken in the pot and then shred with a fork. put shredded chicken back in pot and add beans and then let cook.

I agree, but then I realized it has MSG in it and I rather not use it.

I agree, but then I realized it has MSG in it and I rather not use it.
I did not know that! I'm going to have to check my other mccormack chili packets and make sure they're MSG free.

I did not know that! I'm going to have to check my other mccormack chili packets and make sure they're MSG free.
I never knew that either!!!!! Wow that kinda ruined it for me now. That stinks.
