Anyone have a WW recipe for eggplant parm?
or suggestions for a low fat version that is still yummy?

I dip eggplant slices in eggwhites then breadcrumbs and then bake in the oven.
Comes out really good and crispy without all the grease.
YOu can then add sauce and cheese to your liking, I just eat it plain

I do similar -- I use all egg, but I no longer fry my eggplant, just bake it and its great!
I usually eat half of it when it comes out of the oven before it even makes it to the dish! LOL.
