seperate an egg yolk and whip it a bit
in a pan add butter and heavy cream. as this heats take a small amount of the cream and add to the egg yolk to temper it. slowly add the tempered egg yolk to the cream and butter. **the yolk must be tempered to avoid scrambled yolk in your sauce** Add black papper, ground nutmeg, and grated parmesan cheese. You should not need salt b/c of the butter and cheese. The sauce will seem light at first but the yolk and cheese will thicken it in a few minutes so be careful how much cheese you add. Easier to add more to taste when plated. I don't have measurements as I was never taught to use them, it depends on how much you are making.

Here's the one I make - super easy!
1 cup Heavy Cream 2 Tbsp Butter 4 oz Cream Cheese 3 Tbsp Romano Cheese Pepper
In a sauce pan combine butter, heavy cream and cream cheese (I cube it) and cook over medium heat. Stir until all ingredients are at a boil and cream cheese is melting. Add romano cheese and pepper (I usually put in somewhere around a tsp but I don't measure it...just eye ball it). Continue stirring until all ingredients are combined into a thick sauce.

Came out de-lish!!! But of course I did over-cheese because it seemed to thin!! It was still yummy though! Thanks!
