Two more idea's
When in a rush to make an appetizer I take ham or salamai and lay it out.....take cream cheese and soften it...( in the microwave) Add some garlic powder and chopped green onions( mic together) ...the new flavored herb etc cream cheeses work great....spread in onto one side of the cold cuts....roll up and then slice into bite sized pieces...People love them!
And this one I have made once and they all went..
Cheesy Onion Roll-Ups Original recipe yield: 5 dozen.
INGREDIENTS: 1 cup sour cream 1 (8 ounce) package cream cheese, softened 1/2 cup shredded Cheddar cheese 3/4 cup sliced green onions 1 tablespoon lime juice 1 tablespoon seeded and minced jalapeno peppers 10 (6 inch) flour tortillas 1 (16 ounce) jar picante sauce
DIRECTIONS: In a medium bowl, mix sour cream, cream cheese, Cheddar cheese, green onions, lime juice and jalapeno peppers. Spread one side of each tortilla with the sour cream mixture. Tightly roll each tortilla. Place rolled tortillas on a medium serving dish and cover with plastic wrap. Chill in the refrigerator at least 1 hour. Slice tortillas into 1 inch pieces. Serve with picante sauce.

Just the other day I had some unexpected company and didn't have anything to serve with drinks. I had a package of that imitation crabmeat. Let me know if you don't know what I mean. It's in all the supermarkets and I get it at Costco.
I put it in the food processor and pulsed it really quickly, just til broken up. It may be good also if it were mushier but I wanted little chunks.
I added mayo and Mrs. Dash.
It was great with wheat crackers.

If you like smoked salmon and goat cheese..this is really easy to make!!
I get french bread..cut it into small slices. Toast them. Than I spread goat cheese on each piece and top it with a small piece of smoked salmon.
