This is for 6 eggs:

Ingredients:

about 1/4 cup mayo
1 tsp. mustard
1 tsp. vinegar
salt & pepper to taste
paprika (for garnish)

Cut the eggs in half lengthwise, scoop out the yolks into a separate bowl. Mash the yolks up with the mayo, mustard, vinegar, salt & pepper. Stuff the yolks back into the egg halves & garnish with paprika.

I even do egg salad this way, just add a little more of each ingredient.

Ingredients:

6 hard-cooked eggs, chilled
3 tablespoons mayonnaise
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1/8 teaspoon salt
Paprika (optional)

Cut eggs in half lengthwise. Remove yolks, being careful not to break whites: press yolks through a fine sieve. In a small bowl combine all the remaining ingredients. Mix well. Fill whites with the yolk mixture, using a spoon or pastry bag. Garnish with dash of paprika if desired. Makes 1 dozen halves.
