Anyone Have Any Vegetarian Recipes for Thanksgiving???

Well- it's not necessarily a Thanksgiving dish-- you can make it whenever-- and I am going to make it to bring... Most importantly-- it's protein. It's not vegan-- so, if you are eating dairy it's cool.
I make a couple of substitutions to bring the calories and the fat down-- and even with that it's still DELISH!!
Zucchini Pie
3 cups grated zucchini (usually 3 small zucchini) 1 small yellow onion 1 cup flour (I use whole wheat flour) 1 cup of cheese (any kind—I also use part skim to keep calories down) 3 eggs or Egg Beaters ¼ cup of oil (I use olive oil) ¼ cup of grated parmesan (reserve 1 tablespoon for top) 2 teaspoons of basil or oregano, whatever you want 1 teaspoon baking powder 1 teaspoon salt ¼ teaspoon ground pepper
Pre-heat oven at 350 degrees. Grate zucchini and allow to drain all the water out. Mix dry ingredients, then wet ingredients and combine everything together. Baked for 45 mins or so at 350 degrees. Sprinkle the last bit of parm cheese on top when you take the pie out of the oven.

it's really easy to make too-- it's a lot of prep with the grating of the zucchini-- and to make it even easier-- you can get cheese that is already grated to save yourself that hassle.
Oh-- and you should bake it til the top is golden brown-- I usually have to leave it in longer than 45 mins-- it depends on your oven.

For gravy, I don't have an exact recipe but instead of using chicken/beef stock in another recipe you can just use vegetable stock. You can find them in cartons in the soup isle.
Here are a few I found online
Vegetarian Gravy
1/2 cup vegetable oil 1/3 cup chopped onion 5 cloves garlic, minced 1/2 cup all-purpose flour 4 teaspoons nutritional yeast 4 tablespoons light soy sauce 2 cups vegetable broth 1/2 teaspoon dried sage 1/2 teaspoon salt 1/4 teaspoon ground black pepper
DIRECTIONS Heat oil in a medium saucepan over medium heat. Saute onion and garlic until soft and translucent, about 5 minutes. Stir in flour, nutritional yeast, and soy sauce to form a smooth paste. Gradually whisk in the broth. Season with sage, salt, and pepper. Bring to a boil. Reduce heat, and simmer, stirring constantly, for 8 to 10 minutes, or until thickened.
******************************* Onion Gravy recipe
3 cups water 1 envelope Lipton onion or beefy onion recipe soup mix 4 to 6 tablespoons all-purpose flour (depending on consistency desired)
In medium saucepan, bring 2 cups water to boil. Stir in Lipton onion recipe soup mix; simmer covered 10 minutes. Stir in flour blended with remaining water. Bring to a boil, then simmer, stirring constantly, until gravy is thickened, about 5 minutes. Makes about 3 cups gravy.
Microwave: In 1 1/2-quart casserole, heat 2 cups water at HIGH (100%) 5 minutes.
Stir in Lipton soup mix; heat, covered, 4 minutes. Add flour blended with remaining water. Heat, stirring occasionally, 7 minutes or until gravy is thickened.

Vegetarian Mushroom Gravy recipe
1 1/2 cups boiling water 1/2 ounce assorted dried wild mushrooms 2 tablespoons butter 2 tablespoons vegetable or olive oil 1 (14 ounce) can vegetable broth 5 tablespoons flour 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1/2 teaspoon dried sage 1/4 teaspoon celery seed 1 teaspoon apple cider vinegar
Add dried mushrooms to boiling water and let steep for at least 10 minutes, until water is dark brown.
Drain off mushrooms. Discard them or finely chop and add back into gravy later. Melt butter and oil together in a medium, nonstick saucepan over medium heat. Add flour and whisk until smooth and thick.
Whisk in mushroom liquid and vegetable broth and heat just to boiling. Add remaining ingredients, whisk and simmer another 5 to 7 minutes. If returning chopped mushrooms to gravy, do so now.
Makes about 3 cups or 12 (1/4 cup) servings
********************** Vegetarian Link Gravy
6 links vegetarian sausage 3 tablespoons olive oil 1 cup vegetable broth 1/8 cup all-purpose flour 1 teaspoon salt freshly ground black pepper 1/4 teaspoon dried sage
DIRECTIONS Place the vegetarian link or patties and 1 tablespoon oil in a large frying pan, fry the links until done. Break the links into small pieces. Add the remaining oil and flour to a small pot. Mix the flour with the oil over medium low heat until a rue is formed. Slowly add the vegetable broth, mixing well. Add the salt, pepper, sage and cooked sausage pieces. Bring mixture to a boil.

The latest issue of vegetarian times is full of thanksgiving recipes. I used to subscribe.
Their potato cheddar chowder has been a staple of my thanksgiving dinner for years. I can't find the recipe online

I am still trying to find my recipe!
I think vegetarian time sput it in their cookbook, which is why you can't find it online anywhere, but I think I have it pritned out somewhere

Potato-Cheddar Chowder
Potato-Cheddar Chowder 01-MAR-02 36 6 Servings -- Egg-free
Thick, creamy and rich, here’s my version of the quintessential potato chowder. Note that I use a potato ricer or food mill to mash the potatoes—both of which leave the potatoes, and the soup, with a very fine, smooth texture. Serve this with marinated vegetables and warm dinner rolls or crusty bread.
4 Tbs. unsalted butter 1 cup finely chopped onion 4 cups vegetable broth 3 cups peeled and diced Yukon Gold potatoes 1/2 tsp. salt 2 1/2 Tbs. all-purpose flour 1 1/2 cups milk 1/2 tsp. dried sage 1/2 tsp. freshly ground pepper 4 to 6 oz. grated sharp cheddar cheese
Directions: 1. In large saucepan, melt 2 Tbs. butter over medium heat. Add onion, and cook, stirring often, until softened, 7 minutes. Add broth, potatoes and salt. Increase heat, and bring to a boil. Reduce heat to simmer potatoes gently, partially covered, until tender, 10 to 12 minutes. Remove pan from heat. 2. Meanwhile, in small saucepan, melt remaining 2 Tbs. butter over medium heat. Stir in flour, and cook, stirring constantly, until sauce thickens slightly, about 5 minutes. Whisk 1 cup of hot potato broth, a little at a time, into sauce. Simmer another minute, and remove from heat. 3. Using slotted spoon, transfer cooked potatoes to potato ricer or food mill placed over medium mixing bowl. (Or, transfer potatoes to medium bowl, and mash with potato masher.) Rice potatoes, then stir back into broth along with sauce, sage and black pepper to taste. Bring soup just to a boil, stirring, then remove from heat. Stir in cheese, a little at a time, until melted. Taste soup, adjusting seasonings if necessary. Serve hot.

It's amazing. Everyone loves it. be sure to serve it hot, right as it's done!
And to eat it leftover, just add more milk and heat it up in the pan! ETA: Don't bother with the food mill or potato ricer, stick your braun stick right in the pot!
