Anyone make sauce from fresh tomatoes?

I have a garden for the 1st time this year and I planted 3 roma and 3 beefsteak tomato plants. They are HUGE! The roma already has a ton of tomatoes forming!!!Chat Icon

Do you make your sauce with fresh tomatoes I heard roma is great to make sauce with.....how do you do it? I have been looking online and they make and it and show a canning procedure...but I would rather ask around on here so I can get feedback.

I have basil, oregano and parsley growing too!!

I would crush them up. I start w/meat and then add tomatoes, onion, garlic, oregano, fresh basil, salt and pepper and let it cook down. I LOVE it, and you can control how chunky the tomatoes are

My parents did this with plum tomatoes. If I'm not mistaken, they boiled them first so they would be soft and it would be easier to get the skin off.

Ok, just talked to my mom. Boil the tomatoes, then blanch them in ice water. The skin will peel right off. Put them in the food processor. She added a can of Tomato Puree to thicken it. Then added fresh basil, fresh oregano, onion powder and garlic powder. Hope this helps! Enjoy!

Yes blanch them to get the skin off and mash w/a potato masher...I like chinks, but if you like it smooth feel free to use the food processor

I leave the skin on one or two of them because it seems to help thicken the sauce. I puree with an immersion blender. I use fresh garlic, chopped onion, fresh basil and a little bit of oregano to season. I find that the fresh tomatoes require less time on the stove top or they lose some sweetness.

you can make a fresh sauce 2 ways:

Drop a bunch of soft, ripe tomatoes in a pot of boiling water for a minute or 2 to loosen skin, then run under cold water and skin will peel right off.

hand-squeeze peeled tomatoes in a bowl,
then in a large frying pan, cook some thin sliced onion till translucent& soft (not brown).
add tomatoes, salt pepper, and a little sugar, bring to a boil, and then cook for 15 min on low flame. at the end, add a bunch of fresh basil leaves.

Or you can do a raw sauce-
after you have the skinned tomatoes in a bowl, hand squeeze, and 2 cloves of chopped garlic per tomato- basil, salt,pepper, basil, EVOO and a tiny bit of water- add to drained pasta, drizzle more evoo on top, and mix in a handful of grated pecorino romano-
you can let the sauce marinade in the refridg for a couple of days- it gets better as it marinates....in our family, we put this "fresh sauce" on top of hard stale italian bread(frisella) or on top of grilled chicken, fish, really its good over everything!
