I went to the Jones Beach show a couple years ago and it is a pain to get there and leave. Definitely go earlier in the day and stay for the show if you choose to go. It took almost an hour to get out of the parking lot. And they wouldn't let us stay on the beach afterwards - they rushed us out.
You can check newsday.com for a list of shows.

You can see most of the Jones Beach fireworks show from Wantagh Park or Cedar Creek Park. The parking lots at Wantagh Park fill up during the day but lots of people park in the streets around the park and walk into the park. I know in Wantagh Park you can see them even from the playground, which is at the north end of the park.
