Back to the grind weekly menu help needed!

Need to get back to actually cooking, shopping and prepping on Sunday's (next week it will be on Monday).

Still too hot to turn oven on. Have kids and they appreciate healthier meals! We like veggies and lean meat/fish, whole grains too Chat Icon

Crockpot ok but I am picky about these recipes (will do chili or stew)

Have a indoor grill pan.

Anyone want to share recipes?

I just realized that you said no oven as I was about to post this, but for when it gets cooler and you want to use the oven, this is delicious, pretty easy and healthy as well

I just started making this risotto dish and we're all so addicted, we eat it once a week now. It takes about 30 mins to make. You can sub any ingredients to your liking.

Tomato and Sausage Risotto

edit to add I use turkey sausage.

My family loves this. I have used shrimp and chicken and it tastes delicious with either.

Skinnytaste buffalo chicken strips are so tasty and could not be faster. We like it with ranch or blue cheese and raw veggies for dipping.

Last week I did a simple grilled chicken (made a big batch to add some to salads for lunches) and for dinner we had that with skinnytaste tzaziki and grilled tomatoes, onions, and zucchini. I also did a quick bag of frozen brown rice in the microwave.
