Baed Ziti XPost from Dining In & Out

Hi need quick feed back before I make tom which is why i would like this to stay here.

I have always made baked Ziti with Ricotta. I saw a recipe where they use provolone & sour cream, it was rated excellent by like 4000 people.

Have you ever had baked ziti w/ sour cream?

ewww.... maybe provolone added to ricotta... I can't picture sour cream by itself...

I just went to allrecipes.com - I LOVE that site - anyways...I go to the recipe - sort by lowest rating first - check these out -

http://allrecipes.com/recipe/baked-ziti-i/reviews.aspx?prop24=Recipe%20Review%20Layer%20View%20All&SortBy=Rating&Direction=Ascending&Page=12

"Here are, I hope, a few helpful notes on this recipe. I made it exactly as written, except to substitute half ricotta cheese for the full amount of sour cream. As noted by many others this recipe makes a lot and the sour cream makes it very rich which also makes it difficult to eat a large portion. I believe it serves 10 - 12, unless you are accustomed to eating larger portions and are not having side dishes such as salad and bread. Some reviewers who have not liked this dish have commented on the "tangy" flavor of the sour cream. I didn't notice this, probably because I used half ricotta, half sour cream. That being said, the sour cream does tend to blend with the spaghetti sauce which gives it an overall cream tomato sauce look and taste. If you are a straight tomato sauce purist you might not like this recipe. "

Thats where I got the recipe, it got RAVE reviews. Maybe I will try the half and half, but most people said they used the recipe exact and it was delish.

I use that recipe and it's GREAT. I feel the sour cream gives more flavor than the ricotta. The tang it adds is yum.

Did you do half & half, or all sour cream?

All sour cream, I would think more liquid would make it soupy? I used homemade sauce though....

I've used this recipe for years. I'm not Italian, but I think it's great. I will add that I've served it to many, many people and everyone always likes it. I don't advertise that it has sour cream. It's just nice and creamy. I don't see why half sour cream and half ricotta would be an issue either.

I personally think the tang from sour cream and the sharp provolone sounds good, but it might not please people who are picky and expecting TRADITIONAL baked ziti, kwim? I would make it first for your own family, or if it were just a small group where you know the people are willing to experiment.

I agree with the ladies who said to try it on a different night.

Need that thick ricotta and tons of mozzarella IMO.

Baed Ziti XPost from Dining In & Out

i can see maybe a little provolone as long as it is not sharp, but not sour cream!! maybe a little cream cheese to make it more creamy, but i am hardcore italian, so even that makes me shiver a little lol

Don't do it! My husband made it once with the sour cream. Not a single person in our house ate it and my kids love Italian food. Way to tangy!

I add a heaping table spoon of sour cream to my ziti based on that recipe. It does add a little tang to it. I don't use the liquid part, only the solid part. It really thickens everything up which I like. I use a full container of ricotta and shred a block of mozzarella cheese.

I think it just sounds so damn gross. I'm Italian and cook homemade Italian food all the time, and baked ziti with sour cream just isn't right.

Provolone cheese is very strong but I wouldn't use it for baked ziti either.

I'd stick with your normal ricotta receipe. My BIL one year made baked ziti with ragu sauce (the one with the peppers inside) it was so gross, everyone had to spit it out.

We all felt so bad, but we could not even eat it. I am very picky about Italian food, and I would never try baked ziti with sour cream.

Re: Baed Ziti XPost from Dining In & Out

I was going to say to just try adding some sour cream and provolone to your regular recipe to see how it goes

Can I ask you how much sour cream you added to how many lbs of pasta? Do you think I can do the sour cream and Not the provolone?
