Basil: How to store it/dry it out
So our basil plant is really taking off, but we haven't been using any.
How can I dry it or keep it for use later? I tried freezing it once, but that was a disaster - it came out kind of swampy when it defrosted even a little bit.
There's a dehydrate function on my toaster/convection oven - would that work?

Chop it up into tiny pieces (in a cuisinart) and then mix it with the tiniest bit of water and freeze in ice cube trays. Then empty the trays into a freezer ziploc and use as needed. Each cube is good for a small sauce.

you cut the stalks, tie them in a rubberband then hang them upside down in a dry place. They will dry nicely, then you take the leaves off and crumble them up

I love this Recipe And you can freeze the left overs. I added grilled chicken, aparagus and fresh mozz to the pasta when I made it. Grilled shrimp would be good too.
