Re: bathroom renovation questions
We're in the middle of renovating our bathroom now.
We went with porcelain tiles in the shower/tub area and on the floor. We went to several places like Lowes, HD and Cancos Tile - they have a lot of things on display to give you some ideas!
We went with granite for the countertops. We just love the look of it and found a color we loved and that would match everything else in the bathroom.
We had to custom order our vanity due to size (we needed 72") and we found plenty at Consumers Kitchens and Baths.
Good luck! I'm hoping to post pictures of my new bathroom once its finished (and that can't come soon enough!)

I would go with whatever combination gives you the look you want. Any of what you've listed above should work. Our contractor recommended JustTile 1220 Route 110, Farmingdale, NY - we worked with Fran and she was good with suggesting ideas. They had several mock-up displays in the back too.
Our downstairs bathoom is beadboard on the wall and subway tile in the shower and we went with a manufactured stone for the countertop. Upstairs we used porcelain tiles, a glass border and travertine chair rail with a granite countertop.
For cabinets we used Kitchen Masters in Bohemia.

Re: bathroom renovation questions
We are in the middle of renovating our bathroom as well.
We went with onyx mosiac tiles for the walls & travertine for the floor.
We haven't picked out a vanity yet, but are more than likely going with a neutral colored granite top.
