bbq ideas
this weekend dh and I are hosting a fathers day bbq for his family (they'll only be 8 of us) but i need some ideas as to what toserve as side dishes and appetizers. His family usually does very simple bbqs, and i kind of want to WOW them.
we're doing hamburgers, bbq chicken, hot dogs, steak, corn, and shrimp shishkebobs on the grill.

APPETIZER IDEAS ----------------------- TOMATO/MOOZARELLA/BASIL --------------------------------------
SHRIMP COCKTAIL SITTING IN A BED OF LETTUCE & ICE WITH COCKTAIL SAUCE ------------------------------------------
BRUSCHETTA ON GARLIC FLATS SPRINKLED WITH PARMIGANA CHEESE --------------------------------- HOMEMADE SALSA --------------------- SALSA ---------- INGREDIENTS: 2 (14.5 ounce) cans stewed tomatoes 1/2 onion, finely diced 1 teaspoon minced garlic 1/2 lime, juiced 9 1 teaspoon salt 1/4 cup canned sliced green chiles, or to taste 3 tablespoons chopped fresh cilantro
------------------------------------------------------ DIRECTIONS: Place the tomatoes, onion, garlic, lime juice, salt, green chiles, and cilantro in a blender or food processor. Blend on low to desired consistency. CRAB CEVICHE ------------------- INGREDIENTS: 1 (8 ounce) package imitation crabmeat, flaked 1 tablespoon olive oil 1/2 bunch cilantro, chopped 1 red onion, finely chopped 2 large tomatoes, chopped 3 serrano peppers, finely chopped 2 limes, juiced salt and pepper to taste --------------------------------------------------------------------------------
DIRECTIONS: Place the shredded imitation crab into a glass or porcelain bowl. Plastic or metal are not recommended. Stir olive oil into the crabmeat until well coated, then stir in the cilantro, onion, tomato and serrano peppers. Squeeze the lime juice over everything, and mix well. Season with plenty of salt and pepper. Refrigerate for about 1 hour before serving.
SIDE DISHES ----------------- PARSLEY LEMON ORZO ------------------------- COOK A POUND OF ORZO, ADD 3 TABLESPOONS OF OLIVE OIL, 1/2 TABLESPOON SEASALT, THE RIND OF 3 LEMONS, 1/2 CUP CHOPPED FLAT LEAF PARSLEY AND FRESH PEPPER

I have a whole recipe box at home But this is what I can think of off the top of my head
ceviche (shrimp cocktail)
fried zuchini sticks
butter grilled veggies
peachy iced tea sangria
sweet and sour bbq chicken kabobs

When we want to wow people we usually do a chilled seafood display with lobster, shrimp, king crab legs and i think oysters? we get crushed ice from the fish store. it's always a big hit.

sliced marinated london broil and some really great bread to go with it!!!
ohhh, and I have this kick @ss crockpot cake recipe...let me find it.....
ETA:
here's the recipe-serve with ice cream, and OMG, this will WOW them!!!!
1 chocolate fudge cake mix or your favorite chocolate 8 oz sour cream 1 c semisweet chocolate chips 1 c water 4 eggs 3/4 c vegetable oil 1 4 serving size instant chocolate pudding mix
Mix everything together and pour into a lightly greased crock pot. Cook on low for 6-8 hours or 3-4 hours on high.

Marinate mushrooms in Italian Dressing.
