Re: beer butt chicken

I was just going to post this!!!! I am making this in the oven since it is raining here in TX. Usually, it is done on the grill. I already seasoned my bird. ARe you grilling yours?

You can use the memphis style rub which is:

Memphis Style Rub:
2 tablespoons paprika
1 1/2 teaspoons dark brown sugar
1 1/2 teaspoons granulated sugar
1 teaspoon salt
1 teaspoon cayenne pepper
1/2 teaspoon celery salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

I also added a teaspoon of cumin, italian seasoning, nutmeg and chili powder to the recipe. I didnt have dry mustard and I substituted light brown sugar instead of dark.

HOw are you preparing yours?

I covered the bird with olive oil and covered it with the rub. It is going to sit for at least 4 hours.

I havent decided what I want to put inside the beer can. (lemon, garlic...??) not sure yet. I am going to wait to eat til DH gets home tonight , which is around 8-9
Chat Icon ) Let me know how yours turns out.

Re: beer butt chicken

I'm planning on making it tomorrow on the grill. I tried it one other time and it didn't come out so good. I think it was the chicken though. Chat Icon It just wasn't juicy and lacked flavor.
So we'll be giving it another shot. I didn't think to add anything to the beer can. What do you recommend?
Most of the recipes that I've read say to use garlic, cumin, cayenne pepper, paprika and all those kinds of seasonings.
One recipe suggested putting lemon slices between the skin and meat for added flavor.
Keep me posted!

I was thinking lemon or garlic and/or both. I wonder how mine is going to turn out in the oven.

Are you going to season your bird tonight? They say that the longer you marinade the tastier. I figure my 6 hours will do.

The chicken was soo good! It was very crispy on the outside and juicy in the inside....I loved the rub.

I think this is how I am going to make my chicken from now on.

BTW, I placed lemon, garlic, and celery in the cavity
