best method for filling cupcakes (into cup and also inserting icing inside cupcake)
I want to make cupcakes with a filling inside. The recipe I have for the filling is a vanilla frosting with choc chips. Whats the bext method of inserting the frosting into the cupcake?
Also, how do you girls fill the cupcake cup? I know some people use ice cream scoops or just pour it from a measuring cup. What do you find works best?

I like an ice cream scoop for filling the cupcake cups. One of the ones with the lever that pushes all of the batter into the cup. Lets you get really equal cupcake measurements.
As for inserting the filling into the cupcake, I use a decorating bag filled with the icing, with the tip at the end of it. I use the tip to punch into the top of the cupcake, and then I squeeze the icing in. I watch and stop when the cupcake looks like it's about the explode. Yum!
(be careful with the chocolate chips in the icing though....use mini chips and a bigger decorating tip)

Jackie, you can use an apple corer too to get filling inside the cupcake. Pull the cake out first and then either use a piping bag with a tip or even just a ziploc bag with a tip on the end.
