bow tie pasta, spinach, and feta cheese
Anyone have a recipe for this type of pasta salad? I had this this weekend and it was delicious :) I am not a cook so sorry if this is an obvious question. All the recipes I see coming up have olives in them and I can't stand olives :(

I don't have a recipe but if you are seeing ones you like, I'm sure you can just leave the olives out! Let me check my food blogs and see if I can find something for you

I make this all the time...I put in olives, but you can just leave them out. I also put in red onion and just use either a greek dressing or an italian dressing. I never use a recipe, I just sort of wing it!

Thanks...the one I had didn't seem to have much dressing on- and definitely not italian or greek :)

I just tore this recipe out to keep and try (haven't made it yet). i would leave the olives out and substitute spinach for arugula:

Bowties with Tomato and Arugula
Juicy tomatoes, carb-rich grains, and salty olives and feta cheese make this dish satisfying after a long, hot run on a summer day. Serve it hot or cold.
2 tablespoons olive oil 1 small red onion, chopped 1 tablespoon minced garlic 1 cup mixed olives, pitted and chopped Juice of 1 lemon 4 ripe tomatoes, cut into thick wedges 1/2 cup crumbled feta cheese Salt and black pepper 1/4 cup bulgur 8 ounces bowtie or other cut pasta, preferably whole wheat 3 cups torn arugula leaves
Boil a large pot of salted water.
Put oil in a large, deep skillet over medium heat. Add onion and garlic; cook five minutes. Stir in olives, lemon juice, tomatoes, and feta. Sprinkle with salt and pepper; cook until tomatoes are heated through.
Turn off heat. When the water boils, add bulgur. Let it return to a boil, then add pasta. Cook pasta until tender.
Reserve some of the cooking water, then drain the grains and pasta in a strainer. Toss with the tomato mixture, adding a splash of cooking water. Stir in arugula.
Let dish sit for up to 15 minutes. Stir again. Serves four.

we bought something like this from the food store. it had green & red peppers, red onion, bow ties, black olives, feta...no spinach though but so good...i guess it was greek dressing!

Here's what I would do and plan to do soon. Cook pasta. Set aside. Meanwhile, on a very low heat, cook some minced or thinly sliced garlic (I like a lot). Cook it until the garlic is soft. Then add some fresh baby spinach and wilt it down. Poor over pasta and crumble feta all over the top. Salt, pepper, done! Yum! I love these kind of pastas because they are great hot, room temp or cold!

bulgar is a grain - you can definitely leave that out. (you can see it in the photo - the little specks that aren't feta) This recipe if from runner's world, so they tend to be "healthy."
