Do you like soprts themed stuff?
My coworker is doing this set (she bought on ebay.) I really like it because it is not too "babyish" and it is something the boy could grow up using. ANd I think it matches all of your DH's requirements!

not sure if this is your style, but there are really cute themes at Dwell baby.
I like the animals & the numbers.
They are graphicaly and have a more modern feel to them.
