Brie En Croute FAIL

I was so excited to make this for thanksgiving and it ended up tasting nasty. I used a Brie cheese called "Paris", prepridge farm puff pasty, apricot preserves and pecans. The issue I had was that the Brie had this weird bitter taste, I never had Brie before is it supposed to taste bitter it wasn't expired. How do you make yours and what brand Brie do you buy? Thanks!!

Brie is not bitter. It's creamy and a little nutty. Maybe the pecans or the preserves were bad?

If I'm having a party I will order Brie de Meaux. If I'm just looking to have some cheese myself.. I'm okay with Ile de France or even Presidente.. both of which are in almost all stores.

If I am doing en croute.. I use frozen puff pastry. I'll usually use fig jam or else a mix of carmelized onions and sauteed mushrooms on top.

I would taste all of the components before putting them together and baking... one bad thing ruins the dish.

There was this white stuff on the Brie I think it was the rind? That's the part that tasted bitter...I didnt remove that was I supposed to? Recipe said not too.

I think I like your version with cartelized onions better.

The rind is edible.. some don't like it but it's good. I've never found it to be bitter.. but I may just have developed a taste for it? I was going to guess that maybe the cheese was overripe - the taste is much less mild in overripe cheese.. but the rind is generally darker on riper cheese. If the rind was white it's usually a younger cheese.

I don't remove the rind. The cheese itself is VERY soft and removing the rind and leaving the cheese in tact would be difficult.

I'm sorry you had a bad experience! Maybe the cheese was bad. You should go to a cheese shop and ask to sample their Brie so you can find out if you like it!

I bought the one already done from Trader Joes. I also bought a fig sauce and made glazed walnuts and added it.

I wasn't messing with it if TD had it already done!

Honestly, it sounds like you just don't like brie or bought a bad brand. Was the brie hard? The hard kinds are usually lower quality, usually have thicker rinds and I can see how you might possibly describe it as bitter. Quality brie is supposed to be soft and creamy. My favorite brand is called "Supreme". I can't eat enough of it! They sell it at some stop and shops and at some waldbaums.

I dont like brie...I think it has a weird icky taste. Chat Icon My mother on the other hand could (and has) eat a whole one in one sitting...
