Brining the Turkey

I have been blessed with t-day this year. I have never brined a turkey. I am reading recipes and most of them call for A LOT like 2 cups of salt. Is that overkill? Is brine overrated? HELP!

Thanks, I read his recipe, One review giving "tips" said to use a natural turkey not a Butterball since it will be too salty. I already bought the $30 Butterball instead of sprining for the $55 Bell and Evans... think it's an issue?

hmm...it may.

in that case, lower the salt content to 1 1/2 cups.

really the salt in the brine is to coax out the liquid, then send it back in with the other flavors in the brine...if you are worried about too much salt going back in with it, lower the salt content.

if anything, you can kick it up with the gravy at the end. Chat Icon

i was told you can not brine a butterball turkey for the same reason bc of the salt, from what i hear they already inject them with stuff

check the butterball website. they have brines that are not salt based.

I have to say though, my mom NEVER brined the turkey and it came out fine.

could it have been moister...perhaps...but it was NEVER dry and always yummy.

if you don't want to spend the $$, fat back/bacon on top and a really good meat thermometer will be your friend.Chat Icon

My mom/grandmother never brined our turkeys, but they always used a covered enamel pan....basically, it self-bastes the turkey, and it always comes out juicy and tender....

Just an alternative if you're looking for one...

I NEVER brine my turkey and it comes out FABULOUS!!

I do cook mine upside down though because white meat cooks faster than dark meat and the breast is ALWASY super moist and tender!!

A good meat thermometer is a must!

I buy kosher fresh turkeys and never brine them. The are always yummy and moist.

I only buy kosher turkeys (since my MIL and SIL only eat kosher meat), so I don't brine it. I will say my turkey is always super moist!

We do the same thing b/c I believe Kosher turkeys are already brined, which is why they're so moist. My mom buys the Empire Turkey and swears by them

I brine the butterball.....just lower the salt and do it like Alton says...that is how I do it every year and every year it comes out FAB!!!

I've brined a Butterball using less salt and tons of OJ - plus a few lemons (both kill the saltiness and pump up the flavor).

It's fantastic.
