Burgers?
Having a BBQ this weekend and I usually buy the already formed sirloin burgers from iavarone. Thinking of making them myself this time. What's your go-to recipe/method? I don't like burgers so I never make them.
Also how much meat do I buy? We're having 16 people. What % fat is best? For someone who cooks a decent amount I have a huge knowledge gap when it comes to burgers!

Re: Burgers?
An 80/20 mix is perfect for burgers. I like to form them into 1/4 lb burgers, they shrink a lot on the grill so any smaller and you'll end up with nothing. I would assume AT LEAST one burger per person but always make extra, I would buy at least 6 lbs of meat which would give you 24 1/4 lb burgers. Form them into fairly even, not too thick burgers. Season liberally with salt and pepper and grill. Very easy and SO much better than pre-made patties.

Re: Burgers?
I like this one by Alton Brown:

But you have to grind your own meat. But I'm a purist like that and I refuse to buy chopped meat.

Yes- that works great for meatloaf too!
If I'm not going to add my own seasonings or the onion soup I just buy premade patties- it's the same thing- meat with no seasoning
If i want more flavor, we make our own using the soup mix or the breadcrumbs, italian seasoning etc mentioned above.
ETA- but for a BBQ- with a lot of people, I would 100% get the premade from Iavorone. Way too much work when having a party.

My DH just made the classic burger from the Shake Shack cookbook and YUM! It tasted like the real deal and the sauce is the best part!

I agree, LOVE meatballs but I don't want that flavor in my burger. With burgers, simple is best. Buy good meat, season with salt and pepper, and grill it right and it'll be perfection.

A few options -- Worcestershire sauce, salt and pepper OR, put your favorite bbq sauce in the meat (yum!), or MccOrmick makes various seasoning from burgers that I find to be good -- add it to the meat. Cant go wrong.

Cumin, Worcestershire, grated Parmasean cheese, smoked paprika and garlic; then mix and form patties. I only salt when I'm about to put the patties on the grill. It's a hint of flavor and tastes delicious. I always get tons of compliments.
