Butternut squash...
How do you guys make butternut squash? I saw it all over the supermarkets this weekend and thought it would be nice to make.
I was thinking of cutting it in half .... putting it flesh side up on a baking sheet .... putting a bit of EVOO or butter on it...sprinkling nutmeg and brown sugar....
but that's jsut random off of the top of my head. I have NO idea if that would even be good....
so please...share your simple suggestions!

I love this website hungrygirl.com and they always rave about this recipe. I haven't tried it yet:
Bake-tastic Butternut Squash Fries!
(Serving Size: 5oz. of squash cut into fries, calories: 65, fat: 0g, sodium: 6mg, carbs: 16.5, fiber: 4g, sugars: 3g, protein: 1.5g)
Ingredients: 1/2 butternut squash kosher salt
Directions: Pre-heat oven to 425 degrees. Peel and de-seed your butternut squash. If you're unfamiliar with handling these large items, you may have a little trouble at first. They're fairly easy to peel, but you'll need a sharp knife to cut them. Once your orange friend is peeled and sans seeds, slice it in half. Then cut it up into french fry shapes. We like to use a crinkle cutter to make authentic looking crinkle cut fries, but they'll work any way you slice 'em. Place on a cookie sheet sprayed with non-stick spray. Cover lightly with kosher salt (regular salt works, too, but we prefer kosher salt). Place tray in your pre-heated oven and bake for 40 minutes or so, flipping halfway through baking process. Fries are done when they are starting to brown on the edges and get crispy.
Serve with ketchup, or however else you enjoy fries or sweet potato fries!

LOL, I just bought a butternut squash yesterday because I saw a recipe for Butternut Squash Fries in my Everyday Food magazine and wanted to try it. And I am watching Michael Charello make butternut squash on TV. He is putting a mixture of molasses, sage, balsamic vinegar, sugar, and butter on diced butternut squash and baking it for 20 minutes in a 400 degree oven.

I bake it with brown sugar and pumpkin pie spice a little butter when it's done. YUMMY!!!!

I just made a mix of acorn and butternut sqaush last night....off the top of my head I did this:
Peeled both sqaush's, scraped out the seeds and then cut them into bite size pieces.
Placed pieces on a baking sheet, drizzled EVOO salt, pepper, cinnamon and nutmeg, mixed them around and then baked them for about 35-40 minutes.
After I took them out of the oven and put them in a serving bowl, I poured some melted butter on top.
My DH who does not like squash, LOVED this.

My DH would probably like it also -- just without the cinnamon since he doesn't like cinnamon. He's expanding his food horrizons though -- he ate pork chops for the first time tonight and LOVED them.

I found the best recipe on allrecipes.com
INGREDIENTS 1 butternut squash- peeled, seeded and cubed 1/2 cup mayonnaise 1/2 cup finely chopped onion 1 egg, lightly beaten 1 teaspoon brown sugar salt and pepper to taste 1/4 cup crushed saltine crackers 2 tablespoons grated Parmesan cheese 1 tablespoon butter, melted
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). In a large pot, bring the squash to boil. Reduce to a simmer until squash is soft. In a large bowl, mash the softened squash. Mix in the mayonnaise, onion, egg, brown sugar, salt and pepper. Pour the mixture into a 2 quart baking dish. In a medium bowl, mix together crackers, Parmesan and butter. Sprinkle over the squash mixture. Bake uncovered in the preheated oven for 35 to 45 minutes, until the topping is lightly brown.
I double the cracker mixture to put on top. It has a quiche-like quality about it.
I've also substituted sweet potato for the squash and they both tasted great

Sounds gross and I've only made it with frozen squash in the past but I mix in brown sugar and frech grated parmesan to taste-OMG it is GREAT!

i have done both of these - i love the first one, although healthy it is not really (its so sweet and good though! )
Butternut Squash and Apple Casserole • 1 small butternut squash, about 2 pounds • 2 apples, cored, peeled, sliced • 1/2 cup brown sugar, firmly packed • 1/4 cup cold butter • 1 tablespoon flour • 1 teaspoon salt • 1/4 teaspoon ground cinnamon • 1/4 teaspoon ground nutmeg Peel squash, scoop out seeds, and cut in small pieces. Place squash and apple slices in oblong baking dish (7x11-inch). Blend remaining ingredients with fork or pastry cutter until crumbly. Distribute over squash and apple. Cover and bake butternut squash casserole at 350° for about 45 to 50 minutes. Butternut squash recipe serves 6 to 8.
Butternut Squash with Raisins From Diana Rattray,Your Guide to Southern U.S. Cuisine. INGREDIENTS: • 2 pounds butternut squash • 1 tablespoon butter • 2 teaspoons Worcestershire sauce • 2 tablespoons raisins PREPARATION: Peel squash; remove seeds and cut into small pieces. Cover with water in a large saucepan and cook over high heat for about 10 minutes, or until squash is tender. Drain well and mash with butter and Worcestershire sauce. Stir in raisins. Serves 4.

I usually just cut it in half and scoop out the seeds.....bake in a baking dish (flesh side up) with a little water in the bottom. I don't remember how long it takes but I just check it here and there.
Mash with maple syrup, brown sugar and cinnamon. Or, for a WW friendly recipe mach with sugar free syrup, splenda and cinnamon.
