butternut squash soup recipe?
who has an amazing one? i made it last night and just threw in seasons/spices without really thinking.....im eating it now and WOW. not really good!! LOL

I made it for Thanksgiving, and it was probably the biggest hit of the night. Make sure that the butternut squash is entirely pureed!

I make the butternut squash and crab soup from Whole Foods. It is delicious.

I make a vegan recipe but you could probably modify.
I place vegan butter in a stock pot with carrots, onions, celery and a few garlic cloves. Once they are soft, I add in cubed butternut squash (I get it from costco or BJ'S). I also add salt, pepper and fresh thyme. I cook that for 5 more minutes. I then add a carton of vegetable broth and 1/2 cup almond milk. I bring to a boil. Once boiling I reduce heat for about 30 minutes.
I let cool and then food process. It is so yummy!
