cake pops, what am i doing wrong?
so I attempted to make cake pops and everything went horribly wrong, so i'm hoping for some help....
I baked devils food cake (from a mix) and mixed in chocolate frosting, I shaped it into little balls and refrigerated them.. but then when I went to go stick the lolipop stick in the ball, I dipped in a bit of chocolate (i used candy melts) and stuck it in, attempted to stick the ball into the chocolate to coat, and all of the balls started slipping down the lolipop stick! I ended up with a mess and just tossing everything out...
Am I doing something wrong here?

I thnk that might mean you stuck the sticks in too fa to start, make sure you don't stick the stick more then half way.

You stuck the stick in too far.. and they probably weren't refrigerated for long enough.
when I make them, I form the balls and then stick the tip of the stick into melted chocolate and then into the balls and then I stick the balls into the freezer, not the fridge..
then when they are done, I dip and put them into sprinkles or whatever toppings you are using

I do the same thing. I do not use frosting bc I think they come out to sweet - I use whipped cream cheese instead. IMO - you taste more of the cake that way.

agreed, also make sure your balls arent too big. The weight of them will be too much for the stick when dipped. Good luck! Im making some right now :)
ETA: Dip the pop straight in and pull up, do not stir in the chocolate. If you want a demo of what I mean go to Amazon.com and search bakerella. She has a video posted on her book page.

Thank you for posting that info. I just checked out that demo video that was on there. SO HELPFUL!!!!!!! I'm going to try making these for Thanksgiving.

I bake the cake then mix in the icing. Refrigerate the mixture for an hour or so. Then roll into balls and stick in the stick about halfway in. Then I freeze them. I use melting wafers and add a little crisco to thin it out (half a teaspoon for the whole bag) When they are frozen I dip them and then stick them in styrofoam blocks so they can dry upright. :) Once you get the hang of it they are easy. Don't give up!!

Sounds like you forgot to put them back in the fridge/freezer after inserting the sticks to let the chocolate on the stick harden.

I have never put them back in the fridge after putting the sticks in. Maybe the balls were too big and you put the stick in too far. Try making the balls a little bit smaller next time and inserting the stick halfway. Also, I don't usually submerge my cake balls entirely. I dip them and then use a spoon to throw more chocolate on over them. Then (and I know this sounds stupid, but this is the magic) while holding the stick in your right hand, use your left hand to tap your right wrist rather than tapping the stick on the bowl or just hoping the chocolate slides off and smooths itself out. It makes the finish thin and smooth and perfect every time.
ETA: Also, don't freeze the balls. If the balls are TOO frozen and you dip them in the warm, melted chocolate, the chocolate will begin to crack after it hardens.
