Can anyone help a shiksa make sinker matzoh balls?

DH always likes floaters with seltzer so I make them that way for him... but I love a real sinker... with a dark chewey center. I've tried just not adding seltzer, that's not it.

Anyone know how to make sinkers on purpose? There's just so much reading in a google search on sinkers vs. floaters but not getting a good tip on how to guarantee a sinker!

Hmm, I make good sinkers, but I slighly undercook them. So take one out and try it maybe 10 minutes earlier than you would normally do it. I also add some onions and schmaltz if I have it. Or Gribbenes if I make it...

I'll try that. I was just thinking this morning... duh... it says they're done when the "float" to the top! So maybe I'll take them out earlier! Chat Icon

My google searching came up with so many contradicting methods... cook them longer, cook them less, use more oil, use olive oil, use schmaltz, whip the egg whites, don't peek when cooking, make the mix the night before or hours before, boil them, simmer them, cook them in water, cook them in the broth... Chat Icon Next year, I'm going to Ben's!

Definitely let the mix sit in the fridge for a looong time before cooking them. This what my mom taught me and hers and now mine always come out as sinkers. I love them that way!

I think matzoh ball making is an art!

Okay, so I have a batch of mix in the fridge now (I made it with olive oil). I will not make them until 3/4ish. I'll try one less than package time and one more than package time and see if they are different! Then I'll make the rest.

ETA: Oh... and I'll handle them more!!!

Plus I'll make my usual floaters with seltzer for DH.

Brisket is in the crockpot and Nolan is napping! I'm taking a shower! Chat Icon

I made sinkers!!! Chat Icon Still have some perfecting to do but they sank and they were yummy!
